Tuscan Chicken Panini of Tim Hortons - This sandwich is amazing, I'm not ashamed! Sandwiches inspire me and I like to order things I've never done before. I like the idea of ​​recreating and improving my favorite food, it is a successful attempt. 

Fortunately, the menu lists all the ingredients needed for the sandwich, so no guesswork is required. I changed some ingredients to suit the food in the fridge. I don't have homemade ciabatta muffins, but these bakeries are fresh and packed with ingredients that I can pronounce. I didn't sprinkle cream cheese either, but I bought it at my favorite specialty food market, and they made a lot of money there. 

This is a Herb Garlic Cheese Sauce that contains cream cheese, basil, parsley, and garlic so it's easy to make if you like. It's basically Bussen cheese sauce, but I checked the ingredients and it's not made with fresh herbs or garlic. I don't think it's worth 5 bucks. Basil Pesto Mayonnaise is so easy to make, especially since I have a cup of pesto in my fridge.

Marinade: 

  • 1 pound skinless chicken breast, mashed to uniform thickness 
  • 1 lemon, peeled and squeezed 
  • 1/4 cup olive oil 
  • 2 garlic cloves, minced and minced 
  • Italian seasoned 
  • Kosher salt 

Sandwich: 

  • Basil egg yolk 
  • Garlic sauce and herb cheese sprinkle with sun Dried tomato 
  • Salad or spinach salad 
  • Baby Swiss 
  • Shortbread 4 rolls of ciabatta, lightly brush with olive oil, toast on the grill. 

 Directions:

  1. Place the shredded chicken in the top zippered pocket. Mix together all the marinade ingredients and pour over the chicken. Macerate the bag to disperse the marinade, place it in a container and store in the refrigerator for at least 4 hours. 
  2. Preheat the grill to 350-400 degrees. Bake chicken on the sides for 7 to 8 minutes, about 5 minutes before it's done, and toast if necessary. Remove the muffins and chicken from the grill, then place a piece of Swiss muffin on each chicken breast (my slices are super thin so it will melt quickly); 
  3. In the middle of the bun, sprinkle lots of garlic and herb cheese, and put a piece of chicken on top. Sprinkle chicken with salad greens and sun-dried tomatoes. Sprinkle pesto mayo over bread and put on sandwich, enjoy!
